Winter is almost over and I am so excited to welcome the spring season. With the changing seasons, my schedule is bound to get busier. While I love the idea of home-cooked meals, I find myself stuck in a recipe rut and could use some accountability and fun to ensure we continue enjoying family-friendly dinners.

For our family, prioritizing home-cooked meals has always been essential, cost-effective, usually healthier and most importantly, a daily opportunity to share a meal together!

One Pan Jan Recipe #4 - Sheet Pan Pancakes by The Delicious House

Ingredients you’ll need:

  • ¼ cup unsalted butter, melted

  • 3 cups pancake mix (like Krusteaz or Bisquick)

  • 2 cups milk (2% or whole)

  • 2 large eggs

  • toppings such as mini chocolate chips, blueberries, bananas, shredded coconut

  • maple syrup for serving

Instructions:

  • Preheat oven to 425 degrees. Pour melted butter on baking sheet and use a pastry brush to spread all over pan; set aside.

  • In a large bowl, whisk together the pancake mix, milk, and eggs until well combined. Pour the batter on to the prepared pan and spread evenly using a spatula. Add toppings to the batter and place in preheated oven on center rack.

  • Bake for 12-15 minutes or until the pancakes are golden brown. Remove from oven and cut into squares. Serve with maple syrup.

Ingredients you’ll need:

  • 2 tablespoons oil

  • 1 ½ pounds extra-lean ground beef

  • ½ onion, diced

  • 1 green pepper, diced

  • 2 cloves garlic, minced

  • 2 cups water, divided

  • ¾ cup Primal Kitchen Organic Unsweetened Ketchup

  • 2 tablespoons brown sugar

  • 1 teaspoon Dijon mustard

  • 1 ½ teaspoons salt, or to taste

  • ½ teaspoon ground black pepper

  • 1 dash Worcestershire sauce

  • 1 pinch cayenne pepper, or to taste

Instructions:

  • Place ground beef and onion in a large skillet over medium heat; cook and stir until beef is browned and crumbled, about 10 minutes.

  • Stir in green pepper and garlic; cook and stir until softened, 2 to 3 minutes.

  • Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.

  • Stir in ketchup, brown sugar, Dijon mustard, salt, black pepper, and Worcestershire sauce.

  • Add remaining 1 cup water and bring mixture to a boil. Reduce heat to low and simmer, stirring occasionally, until liquid has evaporated and mixture is thick, about 40 minutes.

  • Season with salt, black pepper, Worcestershire sauce, and cayenne pepper.

One Pan Jan Recipe #2 - One Pan Cajun Shrimp by Southern Kissed

Ingredients you’ll need:

  • 2 tablespoons oil

  • 1 pound raw shrimp, peeled and deveined

  • 14 oz pork or chicken sausage – andouille sausage is a natural for this recipe

  • 1 cup zucchini, sliced

  • 1 medium red bell pepper, cut into cubes

  • 4 garlic cloves, peeled and crushed

  • 2 lemons, quartered

  • Sea salt, to taste

  • Ground black pepper, to taste

  • 2 tablespoons Cajun Seasoning

  • 1 teaspoon dried oregano

Instructions:

  1. Preheat the oven to 400 Fahrenheit.

  2. Spritz a sheet pan with cooking spray.

  3. Combine shrimp, sausage, zucchini, bell pepper, garlic, and lemon in a large bowl. Season with salt, pepper, oil, cajun seasoning, and oregano. Toss until all is coated.

  4. Spread the shrimp mixture onto a sheet pan in a single layer.

  5. Bake for 15-20 minutes on the middle rack of the oven.

One Pan Jan Recipe #1 - Sheet Pan Cashew Chicken by Ambitious Kitchen

Ingredients you’ll need:

  • 1/3 cup of soy sauce

  • 3 tbsp. honey

  • 2 tbsp. rice wine vinegar

  • 2 tbsp. toasted sesame oil

  • 3 cloves garlic

  • 2 tsp. freshly grated ginger

  • 1 red bell pepper, chopped into large chunks

  • 1 orange bell pepper, chopped into large chunks

  • 1 yellow bell pepper, chopped into large chunks

  • 1 red onion, chopped into large chunks

  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces

  • 1 cup raw unsalted cashews

  • Cooked brown or white rice, for serving

  • Chopped fresh scallions or chives, for topping

  • Toasted sesame seeds, for topping

Instructions:

  1. Preheat the oven to 425 degrees.

  2. In a bowl, whisk together the soy sauce, honey, vinegar, sesame oil, garlic and ginger.

  3. Place the bell peppers and onion on a baking sheet and cover them with half of the sauce. Toss well. Roast in the oven for 15 minutes. Meanwhile, place the chicken in a bowl and cover it with the remaining sauce.

  4. After 15 minutes, push all the vegetables to one side. Place the chicken pieces in the marinade on the baking sheet. Add the cashews as well. Roast for 12 to 15 minutes, until the chicken is cooked through.

  5. Toss everything together on the sheet before servings. Serve over rice and sprinkle with scallions and sesame seeds.
