Ingredients

Chicken Fajitas
  • Boneless, skinless chicken breasts, sliced into thin strips or diced
  • 1 large onion, thinly sliced
  • 2 bell peppers (preferably a mix of colors), thinly sliced
  • Taco seasoning
  • Corn or flour tortillas, warmed
  • 1tbs Olive Oil
  • Optional toppings: Guacamole, sour cream, shredded cheese, salsa, chopped cilantro

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken strips to the skillet. Cook for about 5-6 minutes.
  3. Add in sliced onion, peppers and taco seasoning to the skillet and continue cooking until chicken is cooked through.
  4. Warm the flour tortillas in a dry skillet or microwave according to package instructions.
  5. Spoon the chicken and vegetable mixture onto the center of each tortilla.
  6. Add your desired toppings, such as guacamole, sour cream, shredded cheese, salsa, and chopped cilantro.
  7. Fold the tortillas tightly around the filling, creating neat fajita wraps.
